A European Feel, in the Heart of the Big Apple.

Where do I begin. So long ago in 2016, I added Buvette to my food list because I wanted to go get their scrambled eggs and waffle. Yes, it’s that simple, but that’s before I knew how crazy the food scene was. So, when I dove into “touring” for the best food ever, the scrambled eggs took a backseat to things like burgers, pancakes, and donuts. The day finally came in March of 2019, where I said fu#k it, lets go get the monkey off my back and see what this place is about. I drove there one morning, parked in my weekly spot in the Chelsea area of town and started walking to Buvette. I got in the door and the rest was history. Now take in mind, I know nothing about Europe, nor have I ever been (yet), but this place was some kind of time warp back in time that made you feel like you were in a completely different place other than NYC or the United States for that matter. Tucked away just off of Bleeker Street was this spot that I walked by so many time, this place that I just kept disregarding, and a place I purposely kept pushing off till later. This place was immaculate, beautifully decorated, extremely clean, and just breataking. I’m all about vibe and ambiance, and this place had it all from head to toe. I couldn't stop looking around. The place was filled at 8 a.m. with locals and it felt like everyone knew each other. I over heard people saying that they have been coming weekly for over 7 years. The staff knew the customers and vice versa. I felt at home. After all, that is the goal of this place. The goal to give you an amazing culinary experience, all while making you feel at home in a place far away from the “Big Apple”. Chef Jody Willams established Buvette in 2011and her goal was to honor European craft, traditions, and design. The whole experience is meant to tell a story, and it did exactly that. I can't put in to words what the story was, but it was just the feel. The place was perfect. The sun was creeping through the front window, the coffee was being made at the bar I was sitting at (along with the food), and everything just seemed different here. I ended up ordering a latte, Jambon Cru, and the Belgian Waffle. If you recall, I had this spot on my list because of the eggs, so thats why I ordered the Jambon Cru, which is steamed eggs, fresh prosciutto (shaved right in front of me behind the bar), and shaved parmesan (also done right in front of me). As for the waffle, it had this crispy exterior but a raw-ish, bold, and much bouncier interior. The dishes were loaded with flavor. The eggs, covered in so many spices that my tongue had no idea what was happening, especially in combination with the feel and creaminess of the steamed eggs. The waffle, so sweet, but not overpowering. It was a perfect compliment to the eggs. Throughout the whole time I was eating, everything made sense. I had to go to all these other places over the years before hitting Buvette, so I could truly appreciate the experience I was going through at that moment. I’ll say it again, it was perfection. To give some more background about how awesome this place is, it’s located in NYC, Paris, and Tokyo. Now that’s huge. If a place in the USA branches out to different countries of those calibers that fast, you know it’s serious. I’ve been to multiple place that have gone down the same path, and they were all an experience to remember. Do yourself a favor and go get your experince to remember and stop by this place. Highly recommended! Ps: something interesting on their site is their list of locally sourced ingredients. EVERYTHING they use is sourced locally, and the list is huge, so go give that a look.
