I've never been to Miami, so my boys and I decided to take a trip down to see what the culture was like.
We hopped off the plane, picked up a rental car, and immediately drove for something to eat. I had banked on Chef Richard Hales spot, "Bird and Bone" to be our first meal weeks in advance. We were in route driving and looking for "The Confidante", a hotel resort right on the beach that was said to have the restaurant inside. The only issue we ran into was brunch had ended the moment we parked.
Once we got over our "late for brunch" heart break, we walked into the restaurant and it was gorgeous to say the least. The beach, the resort's bar, the pool, and the restaurant were all in the backyard of the resort. Our waiter casually reminded us we missed brunch, but said he'll go back and see what they can do. Thankfully, the powers that be were on our side and our waiter said the kitchen offered to whip us up whatever we wanted. The morning was officially saved and I had THE GREATEST chicken and waffles I've ever had.
This Miami chicken and waffles smoked my all time NYC favorite chicken and waffles. Bird and Bone specializes their chicken and waffles with a number of flavorful ingredients including honey, syrup, butter, maple, vanilla, and bourbon. If you ask me for my opinion, I think this should be the standard when it comes to chicken and waffles. PLUS, Bird and Bone is just a MUST visit when in Miami.
